Once fermentation was complete

chargrilled pork chops

there seemed to be plenty of Cabernet vines growing in Eden Valley

Once optimum flavour had been reached in the vineyard the fruit was picked in the cool of the morning

After some 18 months maturation in barrel and a further 2 years in bottle

A medium to full body wine of excellent texture and lingering which completes a very enjoyable harmonise wine that drinks beautifully on release and  can be cellared in the medium term
